Cream Tart, Blackberry & Rosewater

Ingredients:

  • 8 ounce flour
  • 4 ounce butter
  • 5 ounce sugar
  • 4 egg yolks
  • 10 fluid ounce double cream, lightly whipped
  • 1 lb. blackberries
  • 1/2 tsp. Rose Water
  • 3 Tbsp. blackberry jam

Directions:

Combine butter, 4 ounces sugar, eggs in a food processor and add flour in degrees until a smooth dough is formed. Let the pastry rest for 30 minutes. Roll out pastry and line flan tin, leaving pastry hanging over edges. Press pastry firmly into base and prick surface lightly with fork. Beat eggwhite and brush pastry lightly. Place flan tin in a pre-heated 190 F oven and cook for 15-20 minutes or until a pale biscuit color. Gently break off any pastry left hanging over tin. Lightly mash 6 ounces blackberries and combined with whipped cream. Add remaining sugar and rosewater. Pour blackberry cream into pastry and cover top completely with remaining blackberries. Chill. Prior to serving add 1 tsp. water to blackberry jam and bring to boil in small sauce pan. Dribble sauce over tart and serve.

Vanilla bean and extract prices have increased significantly this year. This is due to a smaller than expected crop in Madagascar last year. This was aggravated by early picking and the vacuum packing of uncured beans. While short term the news is not good, the 2016 flowering was excellent and we anticipate a good harvest. This may lead to some price softening, but with the strong demand for vanilla we have seen it is hard to say how much relief we will see. We will know more later this year as new crop, cured beans become available. Best case we do not anticipate any significant reduction in price before the end of the 1st quarter of 2017.
