Anise or Anise Seed
Anise Seed (Pimpinella anisum) is indigenous to much of the Middle East and is now cultivated in may parts of the world. We source our Anise in either Egypt or Turkey. Anise has a sweet, aromatic, licorice-like flavor and is used both in cooking and baking. Try adding to stews, soups, cookies, cakes and meat dishes. Use this spice with discretion since a little goes a long way.
An essential oil is produced from steam distilling anise seed. Oil anise is used to flavor the liquers anisette and absinthe. It is also used in perfume and to flavor confections and processed meats such as pepperoni, sweet sausage and frankfurters.

More about Anise
As a result of its clean licorice-like flavor, the popularity of Anise seed (Pimpinella anisum) is increasing in the United States. This spice is no longer only associated with holiday baking and it is now used by many of the country’s most innovative chefs to compliment grilled meats, fish and vegetables.
Anise seed is indigenous to Egypt, Turkey, Greece and Lebanon. Silver Cloud sources most of its anise in Turkey, which is one of the largest producers. Most of Turkey’s production is in the Southwestern part of the country around the towns of Denizli, Burdur, and Isparta. Anise is typically grown by the farmers in rotation with barley, corn and wheat. Planted in February and March, just prior to the arrival of the rainy season, it grows rapidly to a height of two to three feet. The mature plant is similar in appearance to Queen Anne’s lace and has beautiful, feathery leaves topped with small white flowers.
The anise seed harvest begins in June. The plants are cut and piled to dry in the sun prior to separating the seeds from the stalks using a threshing machine. Anise seeds are crescent-shaped and high in volatile oil. This makes the seeds very aromatic and flavorful. While a sweet spice, anise is an important ingredient in processed meats such as pepperoni, bologna, frankfurters and dry sausage. In baking it is used for biscotti, pfeffernuesse cookies, classic French Pain D’ Epice, Italian pizelles and a host of sweet rolls, cookies and cakes. One of the more important uses for anise is to flavor Turkey’s national drink Raki and the Greek national drink Ouzo.
The predominant volatile compound in anise is the chemical anethole, which is believed to have many therapeutic properties. Anise is traditionally used to treat rheumatism, arthritis and stomach and muscle spasms as well as a host of other conditions. The seeds are also chewed to help keep breath fresh and aide in digestion. |
