Silver Cloud's Berber Spice was inspired by the aromatic and firey cuisine of the nomadic Berbers of Morocco. One of my favorite seasonings, it can be used in a wide variety of dishes. I find myself reaching for this blend constantly and it is one of the most used in my spice cabinet.

Berber Spice contains garlic, salt, coriander, onion, cinnamon, ginger, chilies, cloves, paprika and other spices. Try this blend as a table condiment or as a seasoning when cooking. It is wonderful when added to almost anything from eggs, potatoes, stews and pasta, to sandwiches and grilled meats.

Stew, Ethiopian Berber

Traditional Ethiopian Recipe.

Ingredients:

  • 2 lb. boned leg lamb
  • 4 cups chicken stock
  • 1 Tbsp. ground Ginger
  • 4 Tbsp. Berber Spice
  • 3 garlic cloves smashed
  • 4 Tbsp. olive oil
  • 1 large red onion
  • 1 red pepper - chopped
  • 1 tomato diced
  • sea salt

Directions:

Trim lamb of any fat or sinew and cube the meat. Heat olive oil in pan over medium heat. Add lamb and stir-fry until brown. Remove lamb and set aside. In the same pan used for the lamb, stir-fry onion and garlic until golden brown. Add red pepper, chicken stock, berber spice, ginger and cook for 10 minutes until sauce begins to thicken. Reduce heat - add lamb into pan and simmer covered for 30 minutes or until lamb is tender. Stir in tomato and season with salt to taste.
