Chervil (Anthriscus cerefolium) is a green, leafy herb largely neglected outside of France. Native to Southwestern Russia and South Asia, it is grown in much of Europe.

Chervil is a great favorite in French kitchens and is called gourmet parsley. The French use it in sauces, soups, omelets and salads (particularly potato salad). It is one of the four herbs used in classic Fines Herbs.

Legend has it that chervil makes one merry, improves the memory and makes the aged more youthful. It is supposed to symbolize sincerity. Chervil's flavor is similar to parsley with a hint of anise and caraway. Once you start using chervil, you will find many uses for this wonderful herb.

Lobster, Pan Roasted with Chervil and Chives

Jasper White's Pan Roasted Lobster with Chervil and Chives from his cookbook Jasper White's Cooking from New England.


  • Two 1-1/2 lb. - 2 lb. lobsters
  • 2 Tbsp. peanut oil
  • 1/4 cup bourbon
  • 1/4 cup white wine
  • 4 Tbsp. butter
  • 2 tsp. Chervil
  • 2 tsp. Chives
  • salt and pepper to taste


Bring a small pot(large enough to hold the lobsters claws) of water to boil. Pre-heat broiler to high.

Turn the lobsters upside down and split down center of shell. Remove intestinal tract from tail. Cut off claws. After removing claws, cut each lobster segment in half (perpindicular to last cut) to make a total of four pieces.

Boil the claws for approximately three minutes. Drain claws - let cool and crack for easier eating.

Pre-heat a saute pan large enogh to hold the lobster pieces.

Put the peanut oil in the hot pan and place the lobster pieces in pan shell side down. Cook for 1 minute and turn pieces shell side up. Place saute pan under pre-heated broiler until the shells start to blacken. This should take 1 to 3 minutes.

Put saute pan back on stove and add bourbon - allowing to flame. When flaming is over, add the wine and cook for another minute or two. Stirring until most of the liquid is evaporated.

Add butter and herbs and blend together. Season with salt and pepper and serve.

Vanilla bean and extract prices have increased significantly this year. This is due to a smaller than expected crop in Madagascar last year. This was aggravated by early picking and the vacuum packing of uncured beans. While short term the news is not good, the 2016 flowering was excellent and we anticipate a good harvest. This may lead to some price softening, but with the strong demand for vanilla we have seen it is hard to say how much relief we will see. We will know more later this year as new crop, cured beans become available. Best case we do not anticipate any significant reduction in price before the end of the 1st quarter of 2017.
