Galangal, Ground - DISCONTINUED
Galangal (Languas galangal) is a ginger-like rhizome that is native to the Island of Java and used primarily in the cuisines of Indonesia, Malaysia and Thailand. At one time, galangal was a relatively popular spice in Europe though today it is rarely used outside of Asia.
Galangal can be used to replace ginger in most recipes. It is somewhat more complex than ginger and has some citrus-like notes. Galangal has a strong flavor and should be used sparingly. When called for in recipes, only a small quantity is usually needed. One slice of fresh galangal root is equivalent to half a teaspoon of the powdered root. Try galangal in fried rice and seafood dishes and stews. Like ginger, galangal cuts the ?fishy? flavor when used in seafood. As a result, it frequently appears in Asian fish and shellfish recipes with garlic, ginger, chili, lemon and tamarind.

We are focusing our efforts on developing a complete line of flavors that have special appeal to customers of Mexican, South and Central American descent.
