Horseradish Powder - DISCONTINUED

Silver Cloud's uses only the finest Chinese Horseradish root (Armoracia rusticana) and grinds it to order. Our product is an excellent base for making wasabi and hot Chinese mustard.

Horseradish is a perennial plant of the Brassicaceae family, which includes mustard and cabbages. The plant is probably native to southeastern Europe and western Asia, but is popular around the world today. It grows up to 1.5 metres (five feet) tall and is mainly cultivated for its large white, tapering root. The horseradish root itself has hardly any aroma. When cut or grated, however, enzymes from the damaged plant cells break down sinigrin (a glucosinolate) to produce allyl isothiocyanate (mustard oil), which irritates the sinuses and eyes. Once grated, if not used immediately or mixed in vinegar, the root darkens and loses its pungency and becomes unpleasantly bitter when exposed to air and heat.

TUNA TERIYAKI WITH HORSERADISH CREAM

Inspired By:recipe featured on recipe.com

Ingredients:

  • 4 5-to- ounce tuna steaks, each about 1 inch thick
  • 1/4 cup purchased teriyaki marinade
  • 3 tablespoons butter, room temperature
  • 2 tablespoons Silver Cloud -  Horseradish Powder
  • 2 tablespoons Silver Cloud - Chives
  • 1 tablespoon light olive oil

1.Place tuna in shallow glass dish. Pour marinade over and turn to coat. Let tuna stand 10 minutes at room temperature, or cover and refrigerate 1 hour.

2.Mix butter, Horseradish Powder and Chives in small bowl. Prepare barbecue (medium heat). Remove tuna from marinade; brush on both sides with oil. Sprinkle with salt and pepper.

3.Grill fish, brushing occasionally with remaining marinade, about 2 minutes per side for medium-rare. Transfer to platter.

4. Top with horseradish cream and serve.

News

Vanilla bean and extract prices have increased significantly in the last few months. This is due to a smaller than expected crop in Madagascar last Summer and high demand for the beans. Unfortunately, the crop was also smaller in some of the other producing areas, which has resulted in increased pressure on prices. While short term the news is not good, there is currently a large crop of vanilla on the vines in Madagascar that will be harvested shortly. This may lead to some price softening, but with the strong demand for beans it is hard to say how much relief we will see. We will know more later this year as the new crop of cured beans become available. Best case we do not anticipate any significant reduction before the end of the 1st quarter in 2017.
