Juniper Berries - DISCONTINUED

Juniper berries (Juniperus communis) are picked from an evergreen shrub. This shrub or small tree is found throughout the Northern Hemisphere. The blue-black seed cones, commonly known as "juniper berries", are relatively new to U.S. cooking, but have long been a staple of European dishes. The astringent flavor of the dried juniper marries well with seasonings, sauces and stuffing for meat, game and pork. It is often used in sausages and pâtés, and in sauerkraut. The berries should be crushed to bring out the flavor.

Juniper also flavors gin as well as other spirits such as schnapps. In fact, the word "gin" is derived from the French word for juniper berry, "genièvre." The Slovak national alcoholic beverage "borovicka" is flavoured with juniper berry extract. In Finland, juniper is used as a key ingredient in making "sahti", a traditional Finnish ale.

Silver Cloud's juniper berries have a strong flavor and should be used sparingly. This is a spice that once you begin to use, you will find yourself reaching for it again and again.

Potato Pancakes with Juniper Berries

Ingredients:

Directions:

Peel and grate potatoes. Polverize or grind juniper berries in a coffee grinder. Add orange extract and juniper berries to grated potatoes. Divide potato mixture into six flattened heaps and fry in butter or oil until golden brown and crisp on both sides. remove from pan and drain on paper towel. Can warm (uncovered) in a low oven. Serve with sour cream as an for accompaniment with steaks or chicken.

News

Vanilla bean and extract prices have increased significantly this year. This is due to a smaller than expected crop in Madagascar last year. This was aggravated by early picking and the vacuum packing of uncured beans. While short term the news is not good, the 2016 flowering was excellent and we anticipate a good harvest. This may lead to some price softening, but with the strong demand for vanilla we have seen it is hard to say how much relief we will see. We will know more later this year as new crop, cured beans become available. Best case we do not anticipate any significant reduction in price before the end of the 1st quarter of 2017.
