Mahlab, which is also spelled mahleb, is another great spice from the Eastern Mediterranean that is well worth experimenting with when cooking and baking. Mahlab kernels are the small, beige-colored, nut meats from the St Lucie (Prunus mahalebare) cherry tree.

Mahlab is widely used in Mediterranean countries and the Middle East, especially Turkey to flavor breads, biscuits and less sweet cakes and pastries. The kernels are typically dried and ground to flavor breads and pastries. Mahlab is soft and has a nutty, rather sour, cherry flavor.

One or two spoonfuls of ground mahlab added to pastries, cakes and fresh fruit flans give them a subtle cherry note. Simple milk puddings can be transformed with a few pinches of mahlab and Turkish rice is given its floral fragrance and interesting taste by using the spice. Traditional Greek Easter bread is flavored with mahlab and decorated with colored eggs. Because of its fragrant character and potential for bitterness, use it sparingly, one-half to one teaspoon (2 - 5 ml) to 2 cups (500 ml) of flour in a recipe is usually sufficient.
