Pure Vanilla Extract 2-Fold SC17

Our Pure Vanilla Extract 2-Fold has a rich, creamy flavor with rummy undertones. Made from a blend of Madagascar and Indonesian beans, we recommend this vanilla for use in premium vanilla ice cream, custards and other high fat applications requiring only the best quality, high impact vanilla.

Pure Vanilla Extract 2-Fold is approximately twice the strength of our pure vanilla extract. To conform to the standard of identity 26.70 ounces of beans are needed to make each gallon.

Silver Cloud's Pure Vanilla Extract 2-Fold SC17 contains vanilla bean extractives, water and alcohol (35.00%) and invert sugar.

Cookies, Almond

Preheat oven to 350 F. Grind 12 almonds into a fine powder. Cream honey and butter together. Add egg, ground almonds and Cherry, Natural Flavor Blend and Pure Tahitian Vanilla Extract.

In another bowl sift flour, baking powder and salt. Add gradualy to wet ingredients. Knead into a dough. (If necessary add a drop of water or flour one at a time to make a kneadable consistency).

Pinch off small balls of dough and place on greased cookie sheet. Press flat into 1/2 inch thickness. Make an indention in top of each cookie and place a whole almond in each. Bake for 15 minutes.

Pure Vanilla Extract


All the Pure Vanilla Extract sold by Silver Cloud Estates is manufactured in accordance with the U.S. standard of identify. Vanilla is the only flavor that has a standard of identity. This means, by law, vanilla extract can only contain certain ingredients to be labeled as pure. The standard of identity requires 13.35 ounces of cured, cut vanilla beans (with a moisture content not greater than 25.00%) be used per gallon of finished extract. The extract must contain a minimum 35.00% alcohol by volume. Glycerin, water and corn syrup are allowed, but not required under the standard of identity for pure vanilla extract.  Beyond moisture content, there is no requirement in the standard regarding the quality, origin of the vanilla beans or extraction process used.  As a result, the quality of pure vanilla extracts can vary depending on the manufacture. 

Pure Vanilla Extract is commonly available as 2, 3 and 4-folds. A fold is a relative measure of strength.  Folded pure vanilla extract must also conform to the standard of identity.  The amount of vanilla beans required, however, changes based on the fold.  A 2-fold requires 26.70 ounces of beans be used per gallon of finished extract.  A 3-fold requires 40.05 ounce of beans be used per gallon of finished extract.  Folded vanilla extract is typically used in foods requiring a more concentrated vanilla flavor.

Vanilla bean and extract prices have increased significantly this year. This is due to a smaller than expected crop in Madagascar last year. This was aggravated by early picking and the vacuum packing of uncured beans. While short term the news is not good, the 2016 flowering was excellent and we anticipate a good harvest. This may lead to some price softening, but with the strong demand for vanilla we have seen it is hard to say how much relief we will see. We will know more later this year as new crop, cured beans become available. Best case we do not anticipate any significant reduction in price before the end of the 1st quarter of 2017.
