Vindaloo
Vindaloo is a seasoning, which is traditionally used in a fiery pork stew with the same name from the Indian city of Goa. This city, on India's west coast, was a Portuguese colony until the 1960s and was the last of the many European colonial holdings on the Indian subcontinent.
Goa has a large number of Christians and it is one of the few places in India where pork is widely eaten. Vindaloo stew is actually a spicy, tropical version of Portuguese porco vino de alho (pork, wine and garlic). In the Indian dish, pork is marinated with a paste made from vinegar (instead of the original wine), garlic and a host of spices for several hours. The pork, together with the marinade and also tamarind water, is then stewed until tender. Variants with poultry instead of pork are popular with Hindus and Muslims.
