Za'atar, Za'tar or Zahtar
Za'atar, which is also spelled za'tar, satar, zahtar or zatr is an Arabic word used to describe both a family of related herbs and a tangy blend of herbs and spices that varies according to region, The seasoning is used primarily in North Africa and the Middle East on meats and vegetables and as a flavoring for olive oil. For a delicious appetizer, cut pita bread into wedges, sprinkle with Za'atar and olive oil and bake for 5 minutes at 350°.

More about Za’tar
One of my favorite seasonings is za’atar. I often recommend it to customers who call looking for something new to try. Za’atar, however, is far from new and has been used in the Middle East and Levant (Israel, Syria, Lebanon and Jordan), since Medieval times. Besides the name of a popular seasoning, the Arabic word za’atar, which is also spelled satar, zahtar or zatr is used to describe herbs that grow wild in the Middle East. Oregano, thyme and savory are all generically described as za’atar.
Za’atar, the seasoning, varies depending on region, town and family, but is generally prepared using some combination of dried oregano, thyme and savory with sesame seeds and salt. Some varieties add cumin, coriander and fennel seeds. The exact recipe for a family’s za’atar seasoning is often kept secret and not even shared with daughters and relatives. Palestinians often include caraway seeds in their za’atar, while in Lebanon ground sumac berries, with their distinctive red color are added.
The Arabs typically use za’atar to season pita bread dipped in olive oil and then za'atar. When the za’atar and olive oil are mixed together, the resulting spread is known as za'atar-wu-zayt or zeit ou za'atar (zeit or zayt, meaning "oil" in Arabic). In Israel, za’atar is used in a soft bread made from sesame seeds, which is in Hebrew is known as bagele. Za’atar is also used as a table condiment throughout the Middle East. It is also a popular seasoning for meats, vegetables and often sprinkled onto humus.
