Mexican Pure Vanilla Extract- OUT OF STOCK

Vanilla is native to Mexico and when properly processed is superior in flavor to much of the vanilla produced in other parts of the world. Mexican vanilla extract typically has a creamy, spicy flavor, which blends well with chocolate, cinnamon and other warm spices.

Unfortunately, much of the vanilla extract sold in Mexico is adulterated with synthetic coumarin, vanillin, ethyl vanillin and other artificial flavor ingredients. All too often, visitors to Mexico, who think they are buying pure vanilla extract at a great price, are actually getting an imitation or artificial product. We have so many customers who want this quality of vanilla that we have formulated a low cost, natural product - Mexican Tourist Type Vanilla Extract, Natural. This extract matches the flavor profile of the popular artificial product.

Our Mexican Pure Vanilla Extract is produced from beans grown in the State of Vera Cruz and contains vanilla bean extractives, water and ethyl alcohol (35%). This extract conforms to the U.S. standard of identity. Our Mexican Pure Vanilla Extract is gluten and sugar-free.

Chocolate Cake, Orange

Pre-heat oven to 350F. Grease and flour two 9-inch rounc cake pans. beat and mix cake mix, buttermilk, oil, eggs, orange and vanilla extract and grated peel until throughly mixed. Fold in 1 -1/2 cups chocolate chips. Pour into pans. Bake 30-35 minutes or until a wooden tooth pick inserted in the center of cake comes out clean. Remove from pans and cool on wire racks.

To prepare frosting - beat butter and marshmallow fluff until creamy. Add confectioners sugar, vanilla extract, orange extract and orange peel and beat until smooth.

place one cake layer on cake plate and frost completely. Top with other cake and frost completely. Spread remaining frosting on sides of cakes to blend the cakes together as one. Sprinkle cake with remaining 1/2 cup of chocolate chips.

Pure Vanilla Extract 

All the vanilla beans used to produce Silver Cloud's vanilla products, except our Pure Mexican Vanilla Extract, are grown exclusively on the Silver Cloud Estates in the beautiful Nilgiri, or Blue Mountains of Southern India.  Since we grow all our vanilla beans we have tremendous control over the quality of the vanilla products we sell.  It enables us to guarantee that the products are natural and produced in an eco-friendly manner.  No child labor is ever used to plant, grow, pollinate, harvest or process any of our products.

In the last five years, Silver Cloud Estates has become one of the largest growers of vanilla beans (Vanilla planifolia) in the world. The estate's elevation, rich soil and climate offer the ideal growing conditions for this tropical orchid and the plants have thrived. Today, over 100,000 plants are intercropped with tea, coffee, black pepper, cardamom and other spices.

The vanilla beans grown on the estate are high in natural vanillin; typically much higher than the beans grown in Madagascar, Papua New Guinea or Tahiti.  Vanillin, gives vanilla extract much (but not all) of its characterizing flavor and aroma. The high vanillin content of our beans means our Pure Vanilla Extract contains approximately 0.24% vanillin. Most other "Bourbon" quality extracts have a vanillin content of only 0.18 - 0.20%. As a result, our Pure Vanilla Extract is stronger and does not need added sugar, glycerin or corn syrup to enhance its pure and natural flavor.

Our Pure Vanilla Extract is manufactured in accordance with the U.S. standard of identify.  Vanilla is the only flavor that has a standard of identity.  This means, by law vanilla extract can only contain certain ingredients to be labeled as pure.  The standard of identity requires 13.35 ounces of cured, cut vanilla beans (with a moisture content not greater than 25.00%) be used per gallon of finished extract. The extract must contain a minimum 35.00% alcohol by volume. Glycerin, water and corn syrup are allowed,  but not required under the standard of identity for pure vanilla extract.

Pure Vanilla Extract 3 - Fold

A fold is a relative measure of strength. Silver Cloud's Pure Vanilla Extract 3 - Fold has approximately three times the strength of our Pure Vanilla Extract. While pure vanilla extract uses 13.35 ounces of vanilla beans per gallon of extract, a three fold requires 40.05 ounces of beans per gallon of extract. 

Three fold vanillas are typically used by food processors. Besides being stronger, they have a much fuller, richer flavor. Silver Cloud’s Pure Vanilla Extract 3 - Fold is ideal for the chef wanting more flavor impact.  There is no better vanilla extract to use in baking, ice cream and beverage applications. While three times stronger than our Pure Vanilla Extract, it is not three times more expensive and, therefore, very cost effective to use.

Vanilla bean and extract prices have increased significantly this year. This is due to a smaller than expected crop in Madagascar last year. This was aggravated by early picking and the vacuum packing of uncured beans. While short term the news is not good, the 2016 flowering was excellent and we anticipate a good harvest. This may lead to some price softening, but with the strong demand for vanilla we have seen it is hard to say how much relief we will see. We will know more later this year as new crop, cured beans become available. Best case we do not anticipate any significant reduction in price before the end of the 1st quarter of 2017.
